Jalebi, one of india's greatest inventions, is quite an art to make as you can see. The entire process takes less than ten minutes.After frying, it is soaked in "chasni" - "liquid sugar". wouldn't miss it for the world though - goes very well after "kachori" - a hot spicy treat and you may need to go10KM run!

1. 2 cups all purpose flour (maida)
2. ½ liter Refined Oil, for Deep frying
3. 1/2 cup buttermilk or sour milk
4. 1 1/2 cups sugar
5. Powdered (confectioner's) sugar ; for dusting
6. 1/4 tsp saffron
7. Water (may not be needed)
8. 1 tsp warm ghee
9. Cardamom powder for dusting

Take a bowl,add the flour,buttermilk,blend it until smooth.If you want water,add a little bit.
Close the bowl with the lid,leave it overnight at room temperature and add the remainig flour in the next day morning,blend with some ghee.
Heat the vessel,add sugar,maitain the flame,add little bit water and then sugar for making a stringy syrup.Add saffron in the bowl.Now the syrup will change into an attractive color and gives more fragrance.
Heat the oil in a pan,take the thick plastic cover and make it like a cone shape,fill the flour and paste the edge/ you can tie with a thread.You can use single hole ketchup squeezer bottle(its hole should be smaller) to make a perfect Jalebi.
Make the Spiral shapes on the Oil pan,Fry it until crisp and golden brown.
Remove the fried jalebi,dip them into the sugar syrup mixture.Dip them on both sides atleast for 30 seconds.
Repeat the process for making remaing jalebis also.Serve them with a cardomon powder and soffron to make more delicious.
