Supportive Tips:
- For making a kaya spread (Bread spread), add 25 ml of water to the coconut milk before add into the egg mixture for thinner consistencies.
- Kaya should be cooked at least for 1.5 hours to preserve it for long time.
Take a Bowl; Hit the eggs and sugar (use hands for whisking) till the sugar has softened.
Now add the thick, fresh coconut milk into beaten egg mixture and mix well.
Sift/Filter the mixture in another bowl.
Add the filtered egg mixture into the double boiler and keep on stirring to avoid chunks.
Take a pan, add the 70 g of sugar, and stir fry in a low flame till it melts in a golden brown
colour. Add the sugar into the egg mixture bowl.
Now remove the egg mixture bowl after 1.5 hours, from the double boiler vessel and allow
cooling down completely. Remove from double boiler and cool thoroughly.
Preserve it in a closed glass container to keep for long time.
