Mexican Rice is the quick and easy to make as it has only very less ingredients.I am really surprised to see the Mexican rice version.

Collect your Ingredients
1 cup Basmati Rice
2 tsp vegetable cooking Oil
Water - 1 & 1/2 cup
1 pod Garlic;finely chopped
1 Onion;finely chopped as jullienne slices
1/2 tsp Chili powder
Salt to taste
Garnish
1/2 Bell pepper;make jullienne slices,shallow fried
1 small size semi ripe Tomato ;finely chopped

1. Soak the rice in the water,wash it,drain it out and add 11/2 cups of water in the rice

2. Heat the Nonstick fry pan,add 1 tsp of oil,Shallow fry the bell pepper and tomatoes(it

3. Heat the Non stick fry pan,Saute garlic,chopped onions fry till it turns into light brown.
4. After the onion into light brown,add chili powder,salt and mix it.
5. Now Add the cooked,cooled rice into the pan,fry for only 2 minutes and then add fried bell
peppers and tomatoes to garnish.

6. Add cilantro/corriander leaves to make more flavours.
