Lightly spiced,rather than searingly hot,the tasty,sophisticated little nibbles go extremely well with
pre-dinner dinks, and also make avery speedy lunchtime snack.
1 Onion;finely chopped
1 Fresh Green chilli,deseeded;finely chopped
1/2" Fresh Ginger;finely chopped
1 tsp Fresh Corriander
2 tsp Fresh White Bread crumbs
1/2tsp Turmeric powder
1 tsp Lime Juice
1 Egg;Lightly Beaten
85g Bread crumbs;dried
3 tsp Ghee/Vegetable Oil
Garnish Fresh coriander springs
1.Take a Bowl,add the prawns,onion,chilli,ginger,coriander,fresh bread crumbs,tumeric,lime juice and beaten egg,knead the mixture well with your hands until thoroughly blended.
2.Divide the mixture into 8 -10 equal sized portions,then form each portion into a ball between,the palms hands and flatten into patties.
3.Place the dried bread crumbs on a large plate and dip each patty,in turn,into the bread crumbs to coat evenly.
4.Heat the ghee/vegetable oil in a large sized,heavy bttomed skillet/pan.Add the patties,in 2 batches if
neccessary and cook for 5-6 minutes on each side,until golden brown.
5.Remove with a spatula and drain on kitchen paper.Keep each batch warm while you cook the remainder.
6.Granish with fresh coriander springs and serve immediately.
