THE MAKING PART
Prep time 20 minutes cooking time 15 minutes serves 6
500 g mackerel/stingray/pom fret fish(choose your fish), cleaned
1 tsp lemon and pepper seasoning
1/2 liter water
50g tamarind pulps (combines and extract juice)
POUND/GRIND
10 dried chillies; soaked
1 stall lemon grass, sliced
12 shallots
2 cloves garlic
40g shrimp paste
1 tsp Turmeric powder
1 tsp ikan bilis stock, optional
2 tsp sugar
1 tsp salt
1 stalk ginger flower, cut into strips
Mint leaves (some)

Marinade fish with lemon and pepper seasoning and set side.
Place tamarind juice, grounded ingredients and turmeric powder into a pot and cook over medium fire for 20 minutes.
Season with salt and sugar. Add fish and allow boiling until fish is cooked.
Sprinkle sliced ginger flower over fish and turn off fire.
Garnish with mint leaves.
